Your system should be fine.
I process 3000-4000 messages a day, and my machine hardly bats an eyelid at the load.
I'm running a single 2ghz Xeon with 1GB ram.
I'm using postfix and mailscanner/spamassassin/ClamAV as a proxy to MS Exchange 2k3.
The same box runs apache, mysql etc.
Load on the machine is negligible.
