Not in headers, but what I have seen (and indeed use) is a server
which quite correctly refuses 8-bit characters in SMTP protocol
exchanges.

If the 8-bit character in question was, say, in the local part of a
sender's or recipient's mail address it would also be presented in the
protocol exchange, perhaps giving the impression that the server
refused 8-bit in headers.
