Email Addresses Get Stripped...

I am using "mailwatch", and if I "release" the message (the exact
message that was in question) from the quarantine, the message contains
all the right address info...doesn't that seem strange?

This can happen with badly configured or migrated exchange servers. The 
adres books and so contain links to bad adresses most likely.

Outlook checks your addres book and links to one you have there, or one 
you have used recently. 99% thats your issue.
