Put the pdfinfo.cf file in /etc/mail/spamassassin.
Put the PDFInfo.pm file in with your other Plugins (my preferred route, 
yes I know there are alternatives). You'll find the directory with

find /usr/lib/perl -type d -name 'Plugin' -print
It should be under /usr/lib/perl5/....../Mail/SpamAssassin/Plugin
Put the PDFInfo.pm file in there.

Now edit your /etc/mail/spamassassin/v310.pre file and add a loadplugin 
line just like the others in there, but referring PDFInfo instead of 
whatever plugin line you are copying.

Then restart MailScanner.
