Yes, it can do that, but you're using sendmail, so theoretically you 
should use dccm if you'd like to use DCC at the MTA level.

If you didn't configure your MTA, you're probably using DCCifd in 
SpamAssassin like most of us, which can't do Greylisging.

DCCifd is the generic interface daemon made to connect other MTAs than 
sendmail to DCC servers (like postfix for example).  You need a specific 
config in your mta to enable this

(example for postfix:

          smtp      inet  n       -       n       -       -       smtpd
              -o smtpd_proxy_filter=127.0.0.1:10025
          127.0.0.1:10026 inet n  -       n       -        -      smtpd
)

I manage many servers that are using dccifd/sendmail and none of them 
has started greylisting all of a sudden.  Therefore, unless you really 
did configure all that, I doubt, DCC greylisting is probably not the 
cause here...

I know it doesn't help you, but at least it will hopefully be clearer 
for you and others.
