For Exch 2003 open Exchange System Manger -- > Administrative Groups -->
Routing Groups --> (your domain) --> Connectors --> Internet Mail Service

Open properties.

On general tab, select "Forward all mail through this connector to the
following smart hosts" and enter the IP of your mailscanner box there.  Do
an "OK".  Not sure if it requires a service restart or reboot.
