Are you currently using the stock spam assassin rules only?

If so I'd recommend you look at Rules Du Jour
(http://www.exit0.us/index.php?pagename=RulesDuJour)

Steve Swaney has a handy installer for MS servers:

BUT I would urge you to check what the rules do before implementing them
blindly :)
