You can do this with a ruleset attached to "Spam Actions" and "High- 
Scoring Spam Actions" in MailScanner.conf. Something along the lines of

To: domain1.com	forward spam at theirfirm.org
To: domain2.com	forward spam at domain2.com
FromOrTo: default	deliver

Easy as that.
