I'd setup a software mirror, if mirroring was your intended goal.
The actual partition layout depends on your goals/situation.
I'd probably do it one of 2 ways:
1.
/boot 100M
swap 2 * $RAM
/ The rest
2.
/boot 100M
swap 2 * $RAM
/ 10G
/var 20G
/var/spool/mail the rest
