I presume you are using exim4?
Just setup a hubbed_hosts file
eg:
># cat /etc/exim4/hubbed_hosts
timesmedia.co.nz: mail.timesmedia.co.nz
I'm not exactly sure if you can point it at ip addresses however, as it
sort of goes against the rfcs - "thou shalt not point mail at an ip" or
similar, which exim follows quite strictly.
You could probably setup an alias in your hosts file though.
