Second Server

You could use LVS (linux virtual server) or another
load balancer and a 3-machine aproach :

2 (or more) pop server + mx (using the same
hardware/software)
1 file server with nfs (with raid for "high
availability")

Since the two servers are basically the same you
reduce costs (to mantain) and provide the same
functionality in both. One goes down ?  The balancer
simply concentrates the traffic in the remaining
servers (in case you have more than two)

The file server only shares the home dirs (with
maildir format). Since it uses raid5 you can "afford"
to loose one disk without loosing data or taking the
system down.  Again since it basically only runs nfs
the setup is easy to mantain.

If you want further redundance ($$$) you can use
raidzone solutions where the file server is actually
two machines mirroring each other.
