Process relayed domain email address locally?

Hi,
 
Let's say I'm relaying domain1.com to an Exchange server.
 
Is there a way with MailScanner or Sendmail to redirect one email
address (spam at domain1.com) to a local mailbox instead? I know you can
use archive to redirect a copy, but the original still gets relayed. I
currently have Exchange sending the email back and I'm looking for a
better way to do this.
