How does one upgrade?

Depends what distribution you are using. If you are using the RPM
distribution, then install the new one the same way you installed the
old one.
Then run upgrade_MailScanner_conf and follow what it tells you to do,
and then upgrade_languages_conf and follow its instructions.

Then stop and restart MailScanner (using the "service" command if you
have one).
