Zombies spawning out of control

We are running a Dual Xeon with 4gigs of memory and SCSI drives.

 

After about 1hr of running MS Mailscanner zombies in a defunct state are
spawning out of control. The last time I had to restart MS because there
were over 111 of them.

 

Anyone know why?
