The MX record in your DNS should point to the new server when you're
ready to switch since that's the one visible from the internet.

It's /etc/mail/mailertable Jamey is talking about, that's the file that
routes all your domains to the next server (current one). Look through
the text files in that directory (/etc/mail/).

I recommend that you set up your new server completely without changing
the DNS records. You can test it by submitting mail from it, that way
you can make sure that it works when you start flowing traffic through it.
