I see.  Tweaking the MailScanner's startup script seems to be your answer.
However what you could do as well is setup a webmail... (i know it is not as secure, but you'll need some kind of authentification on the client-side to avoid being an open-relay).
The port seems to be specified in sendmail.cf, under DaemonPortOptions http://www.sendmail.org/~gshapiro/8.10.Training/DaemonPortOptions.html
But I don't know if it is possible to tell sendmail to read a different config file.

Or maybe you can just tell all processes to listen to 2025 as well.

I'm no sendmail guru, though...
