The problem with those two is that it means I'm on call 24x7. Even I like
the occasional evening off :-)

This is more what I was thinking. I may well respond outside those times if
I want to, but it means I can go down the pub with my mates without
worrying about handling support at the same time (apart from emergency
phone calls for out-of-hours jobs).

The USA morning fits into our late afternoon quite well, so there is a fair
bit of overlap. Stuff that had to be done "out of hours" would be
considered out of hours relative to GMT (or GMT+1 in the summer). "In
office hours" in Aus is during my night time :-)
