The problem here is I have not a directory /opt/MailScanner/
the file languages.conf is located in this directory:
/etc/MailScanner/reports/en/languages.conf.

My question how or where can I change this.

You haven't incorporated your changes into the new MailScanner.conf file,
you have just blindly used your old one and are therefore missing the
configuration option

# Set where to find all the strings used so they can be translated
into
# your local language.
# This can also be the filename of a ruleset so you can produce
different
# languages for different messages.
Language Strings = /etc/MailScanner/reports/en/languages.conf

Same problem as above.
It is now a "PID File" and not a "PID Dir". Full
description in your newly supplied MailScanner.conf file is

# Set where to store the process id number so you can stop
MailScanner
PID file = /var/run/MailScanner.pid
