MailScanner not adding headers

Thanks, I have found the issue.

I wasn't aware that there was already a section at the bottom of
my /etc/MailScanner/spamassassin.conf that had the lines below...

header MS_FOUND_SPAMVIRUS exists:X-MailScanner-SpamVirus-Report
score  MS_FOUND_SPAMVIRUS 3.5

All I did was add in the orgname above (header MS_FOUND_SPAMVIRUS
exists:X-orgname-MailScanner-SpamVirus-Report) and this looks to have fixed
it.
