New server setup, best practice?

Thanks Alex!

The choice for CPU/MEM/storage is easy when it's a virtual machine, can 
move around as needed. Was curious what the recommended disk size is for 
a MailScanner machine and what people do with archive copies of mail/spam. 
Mount an NFS or SMB share to store that or something else?
