That's more difficult than it sounds, since the way Exchange accounts are set up you usually don't have the ability to change the outgoing server.

What you *could* do is tell one server that outgoing e-mail should go to a "smart host", in this case, one of the MailScanner servers. Either that or a "mailertable" like entry somewhere that states that mail to a particular domain should go to a particular MailScanner host.
