What version of MailScanner, what version of what OS? It's rather like
impossible to help you without those tidbits;-)

Are you perhaps using the clamavmodule? That would have a big impact
on the RAM usage. Use the clamd virus scanner instead (look in the
wiki for info on how to set it up), and you'll get the same nice speed
benefit (or better) that clamavmodule give you without the memory
footprint issue.
Other things that eat at your memory would be related to SpamAssassin, likely.
Anyway, without info about the system (like how much RAM it has, to
start with;-), it's kind of impossible to determine if you are
"right-sized"...;-).
