A yum update on a centos 5.2 box will update it to 5.3 automatically.

I disagree. What features of 5.3 do you need? 5.2 is still
fully-supported with patches and so on, you can just continue to "yum
update" your servers and keep them at 5.2. I see no reason to upgrade
them at all.
