How do you evaluate what is a good setting for smtpd_client_*_rate_limit  / anvil_rate_time_unit ?

easy:

look into:

anvil_rate_time_unit
smtpd_client_connection_count_limit
smtpd_client_connection_rate_limit
smtpd_client_message_rate_limit

settings in the Postfix docs.
