If you wanted to send some mail through without MailScanner doing 
anything to it, that's easy with a ruleset on the "Scan Messages" 
configuration option. Much simpler than a second Postfix running on some 
non-standard port.

What you asked for, I believe, was a way of making MailScanner add no 
headers, not a way of making MailScanner pass through mail without 
scanning it at all. So I, and others (I believe), took your request to 
mean that you wanted MailScanner to do all its processing but not add 
any headers as a result. Which isn't what you wanted at all :-(
