Dovecot is very good but is there a specific reason why you wish to go with
POP3 and not IMAP?

IMAP has a number of advantages such as :-
* Email stored on the server so it can be backup up and accessible from many
machines.
* Can have shared folders.
* Can use procmail to filter identified spam into a subfolder automatically.
