MailScanner can't keep up

I'd second what Julian says - you're short on RAM. Vmstat will show this.

Also depends on what spamassassin rules etc you have, the more SA checks the
more memory required.

There's some really huge SA rules that you may have downloaded in the past
that are no longer needed with the URI RBL's.
