smtpd_helo_restrictions = reject_non_fqdn_hostname

And you can also add reject_unknown_hostname to reject MTAs that HELO  
with unknown names.

These can be quite draconian so you might want to first test them by  
adding warn_if_reject in front of those so Postfix does the test and  
logs the failure instead of actually rejecting based on the failure.  
That way over a few days you can make sure you best customer's dodgy  
Exchange server isn't being rejected in error.
