Yes, look in the wiki (and other places:) and think "my squirrelmail box" everywhere it says something like "Exchange/Domino/Groupwise":-). As Raylund says, MS doesn't really come into the picture (well...:), this is all in the MTA(s, but look at for example postfix... This can use only one instance...).

I can be done.  Basically it's the MTA (e.g. sendmail) to configure as 
mail gateway.  MailScanner will be configure as usual.
