I'm doing something similar. I do not want e-mails destined for the outside world to contain any information of the internal infrastructure. What I do is simple, I remove the "Received:" header from all e-mails coming from the LAN on the e-mail gateway(s). You can use the "Remove These Headers" option to point to a file (make sure it ends with ".rules") which contains something like this:
From: 10. Received: X-Mozilla-Status: X-Mozilla-Status2:
FromOrTo: default X-Mozilla-Status: X-Mozilla-Status2:
This way all internal routing information is removed for outgoing e-mails.
