no spam checks from *one* server?

Thanks Julian. I've read up on it all already, and am using rulesets for
a few things, but it seems as though everyone does it slightly different,
which is why I was asking. I'll just go with it and hope I don't break
anything :)

Please read up about rulesets. You just want to apply a ruleset to the
"Spam Checks" setting. Rulesets are documented in
The Book
The MAQ
The FAQ
The /etc/MailScanner/rules/* files
and numerous discussions on this mailing list
