OT: Mail monitoring on network

A client who is using our services requires a solution for tracking all
inbound and outbound emails.
They need to be able to see who is emailing who, though they do not need to
see the contents of the emails

The solutions needs to be (l)user-friendly and run on windows

Any suggestions on or offlist would be welcome
