training spam assassin

We're using MailScanner on sendmail to filter email into our exchange
using the technique described here

As ever though but some spam is leaking through ..
so I thought I'd try to train the bayesian filters

Has anybody got a pointers to a HOWTO get email out of outlook/exchange
and into a file I can get Spam assassin to learn from ?
