How to change "From: MailScanner"?

How can I change the "From: MailScanner" to something else when email is
sent to the person who sent out the virus?

I changed:

Notices From = MailScanner

to what I wanted, but that only changes the emails that are sent to the
system administrators...  not to the person who originally sent the
email...
