MailScanner taking tons of cpu/mem and halting my server

/var/log/maillog

Nope.  My basic Redhat install uses about 64 MB of ram. (without any services started).

It is all the services you run that takes that much ram.  Are you running X?  You might want to cleanup a bit what is started on your server.
