I believe you just put the av tools in a list in your config file and they
run in order like: Virus Scanners = clamav mcafee
I am planning on running clam first so I can see which ones aren't being
picked up by Mcafee to send them to clamav so they can get updated.

seem to work OK.
Best on what platform?
The best is a combination of scanners from different vendors. This is one
of the things I love about MailScanner - you can run as many as you like.
I'd recommend ClamAV plus a commercial scanner.
