For the third matter you might need to look at how your MTA is set to log.
Putting the "to" bit into that section of the log would incur a higher
overhead, although I suspect you are interested in doing it for tracking
purposes.
In that case I would recommend you look at the mail ID, as each one is
unique.
You might also want to look at MailWatch if you haven't already.
