Using Microsoft Outlook to connect to SendMail :))

a) Where I work we do this all the time.
b) this has nothing to do w/ mailscanner
c) It's obvious from looking at the source of your e-mail that it's
composed by "Microsoft Word 11", that it went through an exchange
server, from the exchange server, eventually to a sendmail machine
before getting to it's final destination.
(so from SOME points of view, you ARE using Outlook, Exchange, Sendmail
+ bunches of other things)

Can you ditch your exchange machine + replace it w/ a sendmail/POP/IMAP
machine?
Yes.
How?
1) Install Linux
2) Reconfigure Sendmail
3) install POP/IMAP
4) add users
5) configure Outlook

But.. You'll loose whatever calendar/address-book features that exchange
gave you.
Also, I've got the feeling that w/ your experience level, setting up
sendmail+POP could be a daunting task.
For that you should be searching sendmail related lists.

If you're really looking to replace MS-Exchange in a location where it
already exixts, you could think about using a product like openexchange...
