A quarantined message is the original message, kept in a safe place.

No SpamAssassin headers, no MailScanner headers, just the original message.

Adding the score would change the message, and it would no longer be a proper 
quarantine.

Maybe you should consider forwarding spam?   That way you'd get the 
post-processed message sent somewhere you could archive it?
