I have configured sendmail to run as user mail since a couple of years.
In the past you had to tweak the security settings very thorough but
since 8.11 it handles this as what you would expect.

When we log in as user mail instead of root, you can still do everything
as that user (even kill some sendmail processes). The only thing you
can't do is look in user's mailboxes. And I have restricted the use of
mailq to only user mail.

O yeah, you can't kill the listening sendmail process.
