After doing
mkdir /var/spool/postfix /var/spool/postfix.in
did you set the ownership correctly?
chown postfix /var/spool/postfix /var/spool/postfix.in
chgrp postfix /var/spool/postfix /var/spool/postfix.in
then
postfix start
postfix -C /etc/postfix.in start
(it might need to be "-c" instead of "-C", I can't remember)
