Perhaps you could have service contracts

1 year 24 x 7 365 days
1 year 9-5 (GMT ?) 7 days a week all year round
1 year 9-5 {GMT ?) Monday Friday

I would imagine that the majority of MailScanner users are behind UK time
so would you then charge for 'out of working hours' ?
