Most current versions come with an init script... run that and pass it "stop".

Where exactly init scripts go is a bit dependant on your OS vendor..
typicaly /etc/init.d and /etc/rc.d/init.d are good candidates to check on
linux boxes.

/etc/init.d/MailScanner stop
